Apple tv can send its audio output to another airplay device (e.g Airplay speakers, an airport express, even another apple tv) So the apple tv's video output would go to the overhead projector via hdmi, with the audio would be sent out to a remote audio device via airplay. The airplay buttons in various ipad apps still don't function but the you can use the control centre to connect
In fact the ipad recognised the appletv airplay which resulted in a small pop up notification allowing me to connect

I had the same issue with airplay devices not showing up when trying to use airplay after update to ios 18.x Following conversation with apple support i was advised to reset network settings in the settings> general > transfer or reset [device] > reset > reset network settings
